Mariposa Ingredients:
Cilantro,Lemongrass
CHINESE GLASS NOODLE SOUP WITH CHICKEN, SHRIMP AND JALAPENO

2 ounces dried bean thread noodles (saifun)
3 14 1/2 ounce cans low-salt chicken broth
2 tbsp thin strips peeled fresh ginger
4 2-in pieces Mariposa Farms Lemongrass, cut in 1/2 lengthwise
1 large garlic clove, pressed
2 skinless boneless chicken breast halves, cut into 1/2-in pieces
6 uncooked large shrimp, peeled, deveined, halved lengthwise
2 tbsp fresh lime juice
2 tbsp fish sauce (nam pla)
8 think jalape?o chile slices
1/2 cup chopped Mariposa Farms Fresh Cilantro
   Place noodles in medium bowl. Add enough hot water to cover, let stand until noodles are pliable, about 5 minutes. Drain. Rinse with cold water. Drain. Using scissors, cut noodles into 3-inch lengths. Combine broth, ginger, lemongrass, and garlic in large saucepan. Bring to boil. Reduce heat; simmer 15 minutes. Add chicken and shrimp; simmer until cooked through, about 3 minutes. Stir in lime juice and fish sauce. Bring to boil. Remove from heat. Season with salt and pepper. Divide noodles among 4 large bowls, ladle soup into bowls. Sprinkle each with jalape?o slices and cilantro and serve.
