Mariposa Ingredients:
Savory,Thyme
ROAST QUAIL WITH SAVORY
(Main Dishes )
2 tomatoes
1 tbsp Mariposa Farms Fresh Thyme
1 tbsp Mariposa Farms Fresh Savory--chopped and 12 additional sprigs
2 tbsp bread crumbs
2 tbsp olive oil
4 quail
1 red bell pepper--thinly sliced
8 fresh mushrooms
salt and pepper to taste
   Remove tops from the tomatoes and core. In a small bowl mix thyme, chopped savory, bread crumbs, and 1 tbsp oil. Divide the herb mixture between the tomatoes and set them in a small baking pan. Preheat oven to 425 degrees F. Wash and dry the quail. Rub the birds inside and out with salt and pepper. Place 3 sprigs of savory in the cavity of each. Set on a rack in a roasting pan and roast about 25 minutes. If the quail are not golden brown but are cooked through, place them under the broiler.
After the quail have cooked 10 minutes place the pan of tomatoes in the oven. Coat the pepper strips and mushrooms with oil and put them in the oven 5 minutes later. Season with salt and pepper.
