QUICK MINT NUT BREAD

2 1/2 C all-purpose flour 1 C firmly packed brown sugar 3 1/2 tsp baking powder 3 tbsp corn oil 1 1/2 C milk or 3/4 C each apple juice and milk 1 egg 1 C walnuts 1 C Mariposa Farms Mint leaves--chopped |
| Preheat oven to 350 degrees F. Whisk together the oil, milk, and egg in a large
bowl. Add the flour, sugar, and baking powder and blend well. Add the walnuts
and mint. Bake in a greased 5" x 8" loaf pan for 50-60 minutes. Freezes well. |
