Mariposa Ingredients:
Chipotle (chili)
MEXICAN CHIPOTLE PEPPER BEEF STEW

2 1/2 lbs. roma tomatoes?chopped
2 corn tortillas
2 dried Mariposa Farms chipotle chili peppers?chopped
1 Tbs. vegetable oil
1 clove garlic?minced
1 1/2 lbs. stewing beef?cubed
1 c chopped onion
1 1/2 C beef broth
1/4 C raisins
1 cinnamon stick
2 whole cloves
   Preheat oven broiler and broil tomatoes 3?-4? from heat for 3-4 minutes, or until crisp.
In food processor or blender combine tomatoes, tortillas, and chilies until smooth. Set aside.
In a large pot heat the oil over medium heat. Add the beef and saut? until browned. Add the onions and garlic and saut? 5 minutes. Stir in the tomato mixture, broth, raisins, cinnamon stick, and cloves. Bring to a boil. Cover and reduce heat. Simmer for 1 hour. Add salt and pepper to taste.
Serve over noodles.
