Mariposa Ingredients:
Mint,Italian Parsley,Rosemary,Morel (mushroom)
MOREL MUSHROOM MINT RISOTTO
(Side Dishes)
1 package Mariposa Farms dried Morel mushrooms
1 C boiling water
1 Tbsp. olive oil
6 scallions?minced
4 garlic cloves?minced
2 Tbsp. Mariposa Farms fresh rosemary leaves
2 C long -grain rice
1/4 C red wine
5 C chicken broth
2/3 C Mariposa Farms fresh parsley?chopped
1/4 C Mariposa Farms fresh mint?chopped
   In a small bowl place 1 cup of boiling water and dried mushrooms. Soak of 15-20 minutes. Remove the mushrooms and chop them. Strain the liquid through a coffee filter or cheesecloth and reserve.
Heat the oil in a large heavy saucepan over medium-high heat. Add the oil, scallions, garlic, morels, and rosemary. Saut? for 5 minutes, stirring constantly. Add the rice and stir for 3 minutes or until rice is translucent. Add the mushroom liquid and chicken broth. Cover and simmer over low heat 15-20 minutes or until tender.
Remove from heat and add parsley, and mint and mix thoroughly.
Serve with freshly ground pepper and Parmesan cheese
