Mariposa Ingredients:
Italian Parsley,Oyster (mushroom)
CREAMY OYSTER MUSHROOM SOUP
(Soups and Stews)
1/4 C butter
1/4 C flour
1/4 C chopped onion
1/4 C chopped celery
1/4 C peeled and chopped carrots
1/4 C Mariposa farms fresh Italian Flat Parsley leaves?chopped
1 pkg. Mariposa Farms Dried Oyster Mushrooms
4 C chicken broth
1 C whipping cream
1/2 C mozzarella cheese?shredded
   In a small bowl place the oyster mushrooms. Boil 1 cup of the chicken broth and pour over the mushrooms. Soak 15-20 minutes. Strain through a coffee filter and save the broth. Chop the mushrooms and set aside.
In a large saucepan melt 1/4 C butter. Saut? onion, and celery over medium heat for about 5 minutes or until the onion is translucent. Add the chicken broth, including the reserved broth, carrots, parsley and
Oyster mushrooms.Cook 15 minutes over medium heat. Add the mozzarella cheese, and whipping
Cream. Stir over medium heat until cheese has melted.Salt and pepper to taste and serve immediately. Garnish with additional sprigs of parsley if desired.
