Mariposa Ingredients:
Basil,Shiitake (mushroom)
BEEF STEW WITH SHIITAKE MUSHROOMS (2)

1 cup all-purpose flour
salt and Pepper
6 tbs butter
3 lb stew meat, cubed
1 C onions, chopped
2 tbs garlic, minced
1/4 C tomato paste
1 tbs brown sugar
1 C dry red wine
3 14 1/2 oz cans beef broth
1 1/2 lb potatoes, peeled and cubed
2 1/2 C carrots, peeled and chopped
1 C celery, chopped
1 C frozen peas
1 package Mariposa Farms dried Shiitake Mushrooms
1/4 C fresh Mariposa Farms Basil, chopped

   Empty one package of Shiitake Mushrooms into a small bowl. Boil 1 cup of the beef broth in a saucepan and pour over the mushrooms. Soak 15-20 minutes. Strain through a coffee filter or damp paper towel and reserve the liquid. Set mushrooms aside.
Place flour in a large bowl and season with salt and pepper. In a large pot or dutch oven, over medium heat, melt 4 tbs of butter. Place meat in the flour and mix to coat. Using a slotted spoon remove meat from the bowl shaking off any excess flour. Place meat in pot and brown on all sides. Once browned transfer the meat to a plate and set aside.
Melt 2 tablespoons of butter in the same pot over medium-high heat. Add onions and garlic, saute until tender, about 6 minutes. Mix in tomato paste, sugar and wine. Bring to a boil stirring occasionally. Add broth, reserved mushroom liquid, and meat. Return to a boil. Reduce heat, cover partially and simmer 1 hour.
Add potatoes, carrots, mushrooms, and celery and simmer uncovered about 25 minutes. Add frozen peas and Basil, cook an additional 5 minutes. Season with salt and pepper.
