GRILLED SALMON WITH LAVENDER BUTTER SAUCE

1 C unsalted butter, cut into small pieces\r\n1/3 C minced shallots\r\n1/4 C dry white wine\r\n1/4 C champagne vinegar\r\n2 Tbs. each clam juices and waters\r\n2-4 lavender sprigs, chopped\r\n4 salmon fillets, about 6 oz each\r\n |
| In a saucepan, melt 1 Tbs. of butter over low heat. Add shallots and sweat until soft. Add the wine, vinegar, clam juice, water, and half of the lavender. Raise heat to high and reduce liquid to 2-3 Tbs. Remove from heat and whisk in the remaining butter bit by bit. Strain the sauce; add the remaining lavender. Salt and pepper to taste. \r\n Rub the salmon with a bit of olive oil. Grill over medium-high heat about 3-5 minutes per side. The fish should be firm but not dry. Serve with the butter sauce on the side. \r\n 4 Servings \r\n | |
