SAVORY BABY VEGETABLES

3 Tbs. olive oil 1/2 lb. baby leeks 1 garlic clove 1/2 lb. baby fennel 1 tsp. paprika 1/2 lb. finger carrots 1/4 C fresh marjoram leaves, 1/2 lb. baby turnips, chopped 1/2 lb. baby leeks 4 tomatoes, peeled and chopped 1/2 lb. small asparagus 2 C chicken or beef broth |
| In a large saucepan with lid, heat oil over medium high heat. Add garlic and
cook until golden. Stir in the paprika, marjoram, tomatoes and stock. Place a
steamer in the bottom of saucepan. Add the next 4 ingredients. Let steam 4
minutes. Add the asparagus and cook 4 more minutes. When vegetables are tender
set aside in a serving bowl. Quickly reduce cooking liquid over high heat. Pour over vegetables. 6 Servings |
