Mariposa Ingredients:

SPAGHETTI WITH SAUSAGE SAUCE & ZUCCHINI

1/2 C. chopped onion \r\n1/4 C. vegetable oil\r\n1 garlic clove?minced \r\n3 Tbs. red wine\r\n2 Tbs. Butter\r\n1 lb. Spaghetti\r\n1 package Pasta Mix trimmed and chopped \r\n5 Tbs. Parmesan cheese\r\n2 1/2 C. Roma tomatoes?chopped \r\n3 Medium sliced Zucchini\r\n1 1b ground Italian sausage\r\n1/4 C. Olive oil\r\n |
| Heat half of olive oil in heavy saucepan. Add zucchini and saut? until golden brown. Set aside. Add butter, remainder of olive oil, onion, and garlic and saut? over low heat until softened. Add tomatoes and salt and pepper to taste. Simmer over low heat for about 25 minutes, stirring often. \r\n Brown sausage in a skillet. Drain. Add sausage, pasta mix, and wine to tomato mixture. Cover and simmer over low heat. Meanwhile cook pasta according to package directions. Drain pasta and toss with sauce in a large serving bowl. Serve Parmesan cheese on the side. \r\n 6 Servings\r\n | |
