Mariposa Ingredients:
CHICKEN PICCATA
(Main Dishes)
2 1/2 Lb. Chicken cutlets
1/2 C dry white wine
2 C chicken broth
1 C flour
2 tsp. lemon zest
3 Tbs. olive oil
4 Tbs. fresh lemon juice
3 Tbs. butter
1/2 Pkg. fresh poultry mix--minced
3Tbs. Capers, drained
1 clove garlic, minced
   Season cutlets with salt and pepper and dredge with flour. Reserve 2 Tbs. flour. Heat 2 Tbs. olive oil and 2 Tbs. butter in skillet over medium-high heat. Add half the chicken. Saut? 2-3minutes per side and transfer cutlets to a plate. Add the remaining olive oil and butter and repeat with the remaining cutlets.
Add the reserve flour and cook 30 seconds. Add the wine and minced garlic and cook about 2 minutes. Add broth, lemon juice zest, capers and herbs. Bring to a simmer. Return cutlets to pan. Cover and cook for 5 minutes to heat through. Transfer cutlets to plate. Pour sauce over.
Garnish with remaining fresh herbs.
