Mariposa Ingredients:
Sorrel
CHICKEN AND SORREL SALAD
(Salads )
1 lb. Chicken breasts cut in half
1 C thinly sliced celery
1 C diced red bell peppers
1/2 C chopped scallions
1/3 C chopped dry roasted, unsalted peanuts
8 large romaine lettuce leaves
1 Pkg. Fresh Sorrel
Dressing
1/4 tsp. crushed dried red peppers
1/2 tsp. ground cumin
3 Tbs. lime juice
   Poach the chicken breasts in just enough water to cover. Bring to a boil over medium heat. Reduce heat and simmer covered for 15 minutes. Remove breasts and drain, cool, and debone. Cut meat into 1/2 - inch strips.
Dressing: Combine all ingredients and whisk until blended.
Mix chicken strips, celery, red bell peppers, and scallions in a large bow. Add dressing. Toss well and refrigerate for 1 to 3 hours. Sprinkle with peanuts just before serving on romaine leaves.
