Mariposa Ingredients:

TARRAGON VINAIGRETTE WITH BABY GREENS

1/4 C balsamic vinegar 1 Tbs. chopped fresh parsley 2 Tbs. Vegetable broth 1 Tbs. chopped fresh tarragon 2 green onions trimmed & chopped 1 garlic clove, minced 4 C fresh baby greens 1/4 C blue cheese, crumbled 2 ripe pears, chopped |
| Process vinegar, broth, onions, and garlic in food processor until smooth. Add
fresh herbs and season to taste with salt and pepper. Toss baby greens in a bowl with vinaigrette. Top with pears and blue cheese and serve. Serves 4 |
