Mariposa Ingredients:
Thyme
VEGETABLE CHOWDER
(Soups and Stews )
1 C butter
1 C zucchini--chopped
1/2 C onion?diced
1 C tomatoes--diced
1 C celery?diced
1 C peas
10 Tbs. flour
4 C half -and-half
4 C chicken broth
1/4 C fresh thyme leaves
1 C broccoli?chopped
1 C chopped carrots--diced
Salt and pepper to taste
   Bring a large pot of water to a boil. Add broccoli and carrots. Cook for 3 minutes over medium heat. Add peas and zucchini and cook 4 more minutes.
Strain vegetables. Set aside.
Melt the butter in a large saucepan over medium heat. Add the onion and celery and saut? 4-5 minutes. Mix in the flour and cook, stirring for 2 minutes. Add the stock and stir until thickened, about 10 minutes. Add the vegetables, tomatoes, half-and-half, salt and pepper, and thyme. Cook until vegetables are hot.
