Mariposa Ingredients:
Baby Dill
SALMON AND MIXED SEED CRUST WITH DILL SAUCE
(Main Dishes )
3/4 C dry white wine
2 garden onions--chopped
1 C whipping cream
1/2 C spinach leaves
1/2 C trimmed watercress
2 tbsp Mariposa Farms Baby Dill
2 tbsp butter
6 skinless salmon fillets
3 tbsp sesame seeds
1 tbsp caraway seeds
4 tbsp vegetable oil
   Combine wine and onions in a heavy medium saucepan. Boil until reduced to 1/4 cup, about 5 min. Add cream and simmer until reduced to 3/4 cup, about 12 minutes. Transfer to a blender. Add spinach, watercress, dill, and butter. Puree until smooth and butter is melted. Salt and pepper to taste. Return to saucepan and keep warm. Rinse fillets and pat dry. Sprinkle with salt and pepper. Place sesame and caraway seeds in a shallow dish. Place a fillet on seeds and turn to coat. Repeat with remaining fillets. Heat 2 tbsp oil in each of 2 heavy large skillets over medium-low heat. Add 3 fillets to each skillet and cook until opaque in center, about 3 minutes per side. Spoon some sauce on a plate and top with a salmon fillet. Serve immediately.
