BEEF AND GREEN BEAN CASSEROLE

2 lb ground beef 1 C frozen green beans 1/2 C olive oil 1/4 C Mariposa Farms Oregano--chopped 2 green onions--finely chopped 1 clove garlic--minced 1 tsp salt / 1/2 tsp pepper 1 6 oz can tomato paste 1 C cottage cheese 2 C mozzarella cheese--grated 1/4 C grated parmesan cheese 2 tbsp bread crumbs 1 C milk 1 tbsp butter--melted 1/4 C olives--chopped |
| Fry onion, green pepper & garlic in olive oil until onions are translucent.
Place in a large bowl. Cook ground beef in same skillet until no longer pink.
Pour off excess drippings. Stir in salt, pepper, oregano & tomato paste & cook
over low heat 3 minutes. Add meat mixture to large bowl with onions, etc. Add
cottage cheese. Meanwhile cook green beans according to package instructions. Add to ground beef & onion mixture and stir until blended. Place in greased 13" x 9" baking dish. Sprinkle with mozzarella cheese, cover and bake in 350 degree oven for 30 min. Mix melted butter with bread crumbs, parmesan cheese, & green olives. Sprinkle on casserole and bake uncovered for 15 min. |
