HERBED FRENCH BREAD

1 envelope dry yeast 1 tsp water 1/4 cup warm water 1 cup water 2 1/3 to 3 cups all purpose flour 3 tbsp nonfat dry milk 2 tbsp fresh thyme 2 tbsp fresh sage 1 tbsp minced fresh Italian flat parsley 2 tbsp melted butter 1 1/4 tbsp salt |
| Dissolve yeast, sugar, and warm water in a large bowl. Let stand until
foamy. Butter a large bowl. Blend 1 C water and 1/4 tbsp melted butter into yeast mixture. Combine flour, milk, and salt. Stir into the yeast mixture 1/2 cup at a time until a sticky dough forms. Turn onto a floured surface and knead until smooth and elastic. Add dough to the buttered bowl, turn to coat entire surface. Cover and let rise in a draft free area until dough has doubled in size. Generously butter French bread pan or baking sheet. Combine herbs. Punch down dough. Turn it onto a floured surface and knead in herbs. Cut dough into 3 pieces. Roll out each piece onto an 8" x 15" rectangle. Starting with the long side, roll dough into a cylinder. Tuck ends under and pinch seams to seal. Cover and let dough rise until doubled in size. Bake at 375 about 20 minutes or until golden. Remove from oven and brush with remaining butter. Makes 3 loaves. |
