Mariposa Ingredients:
Arugula
ARUGULA, FENNEL & ORANGE SALAD
(Salads )
1/4 C minced shallots
3 tbsp extra virgin olive oil
1 1/2 tbsp lemon juice
2 large oranges
1 small red onion thinly sliced
7 C arugula, trimmed
1 large fennel bulb, quartered, cored, and chopped (optional)
   Whisk shallots, olive oil, and lemon juice in a medium bowl. Cut all peel and white pith from oranges. With a small knife cut between membranes to release segments.
Combine arugula, fennel, and onion in a large bowl. Toss with dressing. Add orange segments. Season salad to taste with salt and pepper.
