Mariposa Ingredients:
Shiitake (mushroom),Bay Leaves
BEEF STEW WITH SHIITAKE MUSHROOMS (1)
(Soups and Stews)
2 Tbs. olive oil
1 28 oz can diced tomatoes in juice
1 onion, chopped
Zest of 1 orange
1 C red wine
3 garlic cloves, minced
1 1/2 Lb. Chuck steak cubed
1/2 tsp. ground allspice
6 oz fresh shiitake mushrooms, chopped
1 C chopped carrots
2 bay leaves
   Heat oil over medium-high heat. Add the meat, sprinkle with salt and pepper and saut? 5 minutes. Add mushrooms, onion, and garlic and saut? 5 more minutes. Add the tomatoes, wine, and bay leaves, and orange zest and bring to boiling. Cover and simmer for about 1 hour. Add the carrots and continue cooking 1 more hour or until meat is tender. Discard bay leaves and serve over rice or noodles.
