BARLEY AND MUSHROOM BAKE

1/2 lb chestnuts 1 tbsp olive oil 1 1/2 oz dehydrated lobster mushrooms 3 1/2 cups of broth, heated 1/3 C carrots 1/3 C celery 1/4 C dry vermouth 1 tbsp fresh thyme 1 C pearled barley 1/3 C celery |
| Reconstitute mushrooms by soaking them in boiling water until they are soft.
Preheat oven to 350. Saut? mushrooms in olive oil about 7 minutes. Add butter, shallots, carrots, and celery. Saut? for 3 minutes. Add vermouth and bring to a boil. Add barley, thyme, and hot broth, stir well. Transfer to a casserole and bake for 45 minutes. Serves 4-6. |
