Mariposa Ingredients:
Thyme,Lobster (mushroom)
BARLEY AND MUSHROOM BAKE
(Side Dishes )
1/2 lb chestnuts
1 tbsp olive oil
1 1/2 oz dehydrated lobster mushrooms
3 1/2 cups of broth, heated
1/3 C carrots
1/3 C celery
1/4 C dry vermouth
1 tbsp fresh thyme
1 C pearled barley
1/3 C celery
   Reconstitute mushrooms by soaking them in boiling water until they are soft. Preheat oven to 350. Saut? mushrooms in olive oil about 7 minutes.
Add butter, shallots, carrots, and celery. Saut? for 3 minutes. Add vermouth and bring to a boil. Add barley, thyme, and hot broth, stir well. Transfer to a casserole and bake for 45 minutes.
Serves 4-6.
