SPINACH SALAD WITH HERBAL VINAIGRETTE

Ingredients for Dressing 1/4 C red wine vinegar 1/2 tsp ground pepper 1 clove garlic--mashed 1 tbsp fresh Basil--chopped 1 tbsp fresh Italian Parsley--chopped 1 tbsp sugar 1 tsp salt 1 1/2 tsp dijon mustard 1 tbsp fresh Thyme--chopped 1 tbsp fresh Tarragon--chopped 2 tbsp fresh squeezed lemon juice 3/4 C olive oil Ingredients for Salad 1 bunch spinach--rinsed 4 to 5 green onions--chopped 1/2 C swiss cheese--grated 1/2 C water chestnuts--sliced 1/4 C almonds--slivered |
| Directions for Dressing Blend together first 11 ingredients. Slowly whisk in the olive oil. Chill for at least an hour to let flavors blend. Directions for Salad Toss together salad ingredients and top with chilled vinaigrette. Serve immediately. Serves 6. |
