Mariposa Ingredients:
Sage,Bay Leaves
ASIAGO & SAGE SCALLOPED POTATOES

2 tbsp butter
2 medium onions--thinly sliced
3 cloves garlic--minced
2 fresh bay leaves
1/4 tsp nutmeg--freshly ground
1 1/4 tsp salt--divided
1 tsp pepper--freshly ground and divided
1 1/4 C heavy cream
1/2 C milk
1 C Asiago cheese--freshly grated
1 C plain dry breadcrumbs
2 tbsp extra virgin olive oil
2 1/2 tbsp fresh Sage--shredded and divided
2 1/2 lbs potatoes--peeled and thinly sliced
   Preheat oven to 400 degrees F. In a large saucepan over medium heat, melt butter. Add onions and cook till golden. Add garlic, bay leaves, nutmeg, 1 tbsp salt, and 3/4 tsp pepper. Stir together then add cream and milk. Bring just to a boil. Remove from heat, let stand 5 min. In a medium bowl, toss the asiago cheese with the breadcrumbs, olive oil, 1/2 tbsp sage, 1/4 tsp salt and 1/4 tsp pepper. Set aside. Remove the bay leaves from the cream mixture. Stir in the remaining sage. Combine the cream mixture with the potatoes and stir till all potatoes are covered.
Spread 1/2 the potato mixture in a 2 quart baking dish. Sprinkle 2/3 cup of the cheese and breadcrumbs over the top. Cover with the remaining potatoes and press firmly to pack them down. Spoon the remaining liquid over the potatoes and cover with the remaining cheese and breadcrumbs.
Bake for 1 hour or until the potatoes are tender and the top is golden. If it browns too quickly cover the top loosely with foil.
