Mariposa Ingredients:

SPAGHETTI WITH ARUGULA AND SALAD GREENS

1 head Buttercrunch lettuce 1 head escerole 1 bunch romaine lettuce 1 bunch arugula 1/4 C. wine vinegar 1 lb. spaghetti 4 Tbs. Olive oil 2 cloves minced garlic |
| Follow cooking instructions for pasta. Wash and dry greens. Tear into
bite-size pieces until there are about 6 cups total. Mix oil, vinegar, and
garlic in a small bowl. Drain pasta and place in large bowl. Add greens. Pour oil, vinegar, and garlic over pasta and toss to mix. Add salt and pepper to taste. 6 servings |
