HERB & GARLIC ROASTED TURKEY

1/4 C unsalted butter 9 cloves garlic--finely chopped 4 tsp grated lemon peel 1 tbsp fresh Thyme--chopped 1 tbsp fresh Rosemary--chopped 1 tbsp fresh Sage--chopped 2 tsp salt 1 tsp dried crushed red pepper 1 12 to 13 lb turkey--giblets removed 1 large onion--chopped 2 ribs celery--chopped 1 large carrot--chopped 1 lemon--quartered 1 bunch fresh Thyme 1/4 C butter--melted 2 C chicken broth |
| Blend the first 8 ingredients in a small bowl for seasoned butter. Rinse turkey, pat dry. Place on a rack set in a roasting pan. Starting and the neck slide hand between skin and breast, thigh and drumstick. Rub the seasoned butter under the skin. Fill the cavity with chopped vegetables, lemon and thyme bunch. Tuck wing tips under and tie. Preheat oven to 425. Position rack in the lower 1/3 of the oven. Brush turkey with melted butter. Place turkey on its left side and bake 30 min. Flip turkey to right side and bake 30 min longer. Turn breast side up. Baste with 1 cup broth, cook 30 min. Reduce oven temp to 325. Baste with 1 cup broth. Roast turkey until thermometer inserted into the thickest part of the thigh registers 175, about 50 min longer. Transfer to a platter. Let turkey stand 30 min before serving. Serves 8. |
