Mariposa Ingredients:
Basil,Mint
MELON & BASIL SOUP
(Soups and Stews )
2 cantaloupe or honeydew melons
1/3 C superfine sugar
3/4 C water
fine grated zest and juice of 1 lime
2 tbsp shredded fresh Basil
2 tbsp shredded fresh Mint
   Cut melons in half and remove seeds. With a melon baller scoop out about 20 melon balls and set them aside. Scoop out the remaining flesh and place in a food processor. Place the sugar, lime, and water in a saucepan and simmer over low heat. When sugar dissolves remove from heat and leave to cool slightly. Pour 1/2 the syrup into the processor with the melon. Blend until smooth. Add remaining syrup to taste. Pour into a large bowl and chill.
