Mariposa Ingredients:
Baby Dill,Italian Parsley,Sun-Dried Tomatoes |
RED POTATO SALAD

5 1/2 lbs red potatoes 1 1/4 C dry white wine 6 tbsp red wine vinegar 4 tsp Dijon mustard 3 garlic cloves, minced 1/4 C olive oil 2 red bell peppers, chopped 12 green onions, chopped 1 red onion, sliced 3/4 C Sun Dried Tomatoes, diced 1 C fresh Parsley, chopped 1/4 C fresh Dill, chopped |
| Steam potatoes until tender. Transfer potatoes to a large bowl, pour wine over
them and set aside. Mix next three ingredients in a small bowl, gradually whisk
in oil. Pour over potatoes. Mix in remaining ingredients. Let stand 1 hour
before serving. Serves 12. |
