CHEESE RAVIOLI IN CHICKEN BROTH

2 3/4 C. cheddar cheese 1/4 C. Romano cheese 1/3 C. sour cream 3 Tbs. Chopped fresh Italian Parsley 4 Tbs. Chopped fresh Chives 2 Tbs. Chopped fresh basil 2 tsp. grated lemon peel 50 wonton wrappers 1 egg white, slightly beaten 1 C. low-salt chicken broth 4 Tbs. butter |
| Put cheese, sour cream, 3 Tbs. Chives, 2 Tbs. Parsley, basil, and lemon peel in
medium bowl. Stir to blend. Season to taste with salt and pepper. Fill wonton wrappers with 1 heaping tsp. filling. Brush edges with egg white and fold over. Press to seal. Place on baking sheet lined with plastic wrap. Boil broth and butter in heavy small saucepan until reduced to 3/4 C. Whisk in remaining chives and parsley. Season to taste with salt and pepper. Cook ravioli in large pot of boiling salted water for about 3 minutes or until tender. Using slotted spoon, transfer ravioli to serving bowl. Spoon broth over the ravioli and top with Romano cheese, and serve. |
