Mariposa Ingredients:
Oregano,Italian Parsley,Sage,Thyme,Northwoods Blend (mushroom)
WILD MUSHROOM DRESSING

2 tsp unsalted butter
3 C fresh French or Italian bread--crusts removed, cubed
4 slices bacon--chopped
1 yellow onion--finely chopped
2 ribs celery--finely chopped
2 pkgs dried Northwoods Blend mushrooms
2 C Marsala wine
4 large eggs--beaten
2 tbsp fresh Thyme--chopped
1 tbsp fresh Oregano--chopped
3 tbsp fresh Sage--chopped
3 tbsp fresh Italian Parsley
   Preheat oven to 350. Butter a 6-cup baking dish and set aside.
In a bowl, soak the bread cubes in milk.
Empty both packages of Northwoods Blend into a sieve and rinse. Transfer them to a large bowl. In a saucepan heat 2 cups Marsala wine to just boiling. Pour wine over the mushrooms and let set until the mushrooms are soft. Once reconstituted remove the mushrooms and set them aside. Strain liquid from the mushrooms and save 2/3 cup. If there is not enough add more Marsala.
In a large skillet, cook the bacon until crisp. Remove the bacon from the pan and drain. Add onions, celery, garlic, and cook until softened. Add mushrooms and strained Marsala, stirring with a wooden spoon to deglaze the pan. Remove from heat and let cool completely.
Squeeze excess milk from bread and place in a large mixing bowl. Add the eggs and mix well. Add the mushroom mixture, bacon, chopped herbs, salt and pepper. Mix well and tranfer to the baking dish.
Cook 45 minutes or until golden brown.
Serves 6-8.
