TROPICAL SALSA

1 large mango, diced 1 large avocado, diced 2 slices pineapple, cored and diced 2 tbsp soy sauce grated peel and juice of one orange 2 tbsp peanut oil 1 garlic clove, chopped 1 tbsp piece gingerroot finely grated 1/2 tbsp red chili flakes 4 tbsp fresh Mint 4 tbsp fresh Cilantro 2 tbsp dark brown sugar Place mango, avocado, pineapple and chopped herbs in a large bowl. |
| In a separate bowl whisk together the rest of the ingredients until well
blended. Pour over fruit, toss gently. Chill before serving. Serves 4. |
