GRILLED ZUCCHINI & SUMMER SQUASH SALAD

4 medium zucchini, trimmed, halved lengthwise 4 medium yellow squash, trimmed, halved lengthwise 5 tbsp olive oil 1/2 C fresh Basil, chopped 1/3 C fresh parmesan 2 tbsp balsamic vinegar |
| Place squash on a baking sheet. Brush with 3 tbsp olive oil. Grill over medium
heat till golden brown, turning occasionally. Cut vegetables into 1 inch pieces and toss with remaining ingredients. Salt and pepper to taste. Serves 6. |
