ARUGULA & LETTUCE SALAD

4 tbsp finely diced fresh tomatoes 4 tbsp chopped Mariposa Farms Chives 1 pkg Mariposa Farms Arugula 1 C chopped spinach 1 head Buttercrunch lettuce Vinaigrette Dressing: 2 green onions--finely chopped 1 tbsp olive oil 1 tbsp red wine vinegar 1/2 tsp Dijon mustard Salt and pepper to taste |
| Wash and dry the lettuce. Toss all salad ingredients except the tomatoes in a
large bowl. Combine the vinaigrette dressing ingredients and whisk until
blended. Add salt and pepper to taste. Sprinkel tomatoes on top of the salad.
Serve with vinaigrette dressing. Serves 4. |
