BLACK BEAN SALAD WITH CILANTRO

3 cans black beans--rinsed well 2 janapenos seeded and minced 1 red onion, coarsely chopped 1 package Mariposa Farms Cilantro 1 tsp salt 1 tsp black pepper Dressing: 1tbsp ground cumin 2 cloves garlic 1/2 C red wine vinegar 1 C olive oil |
| Place beans, jalapenos, onions, cilantro, salt and pepper in a medium bowl and
stir gently until combined. Combine all dressing ingredients in a jar with a tight-fitting lid. Shake to blend. Pour the dressing over the bean mixture. Mix thoroughly before serving. Serves 10-12. |
